    this is still awkward for me. i swear, i'm only MILDLY this awkward in real life.

    You guys, since I’m still getting the hang of things in this whole “Blogging about what I wear” and “Being conscious about what I wear” whatnot, I love looking to other people for inspiration.

    I like to think that I have my own style. It’s rare that I’m going to copy a style item for item – but I think you can gain a lot of inspiration from other styles and/or learn how to work a style in your own way.

    Or something.

    Anywho, I’m a huge fan of Marionberry Style. Like, this lady is a teacher (I used to be a teacher), she’s a wife, she loves fashion, and she is FREAKING HILARIOUS. Seriously. That girl is funny. I love her fashion sense and I love using some of her looks for inspiration. (Check her out here).

    I had tried a look earlier this week and then saw her post this yesterday, and BAM. I knew it wasn’t an exact, but she did a great job of explaining the whole “monochromatic styling” thing. That’s a huge word for a simple style.

    AND, when I saw another blogger lady (Simply Sarah!) I love decided to host a “Blogger Copycat” link up – I thought, WHAT THE HEY? Why not give it a shot? So I did. Imitation is the best form of flattery, right?!

    Anyway. I am rambling.

    You guys, it’s no secret by now that I love Mexican food. Love it. I love it. There are not enough O’s in the word LOOOOOOOOVE to emphasize my love for Mexican food.

    And as I have begun to get better at cooking (or attempt to) I am working on perfecting my favorite dishes.

    Arroz Con Pollo is my favorite dish at any (sit down – i.e. not Chipotle) Mexican Restaurant. So, over the years, I’ve worked on perfecting my own, signature Arroz Con Pollo. [That's Chicken and Rice for those of you who don't speak Spanish :) ]. It’s not like the restaurant’s… but that’s okay. It’s like, DELICIOUS.

    So, anywho. Cinco de Mayo was last Saturday and husband was out of town so we had a belated Cinco de Mayo meal on Monday – and, of course, I made signature Arroz Con Pollo.

    Well, here’s the recipe. Now, I will warn you – that when it comes to the spices – or the “tastiers” as I like to call them, I do not measure. There is no science to it, but I will tell you what I use and what I use more vs. less of. The other stuff or the “mandatories” as I like to call them, are pretty set in stone as far as proportions.

    Ingredients:

    Mandatories:

    • 1 Cup uncooked white rice
    • 1 Pound ground chicken or ground turkey (I honestly use whatever is on sale)
    • 1 Cup chicken broth
    • 1 Cup water
    • 1 Can Diced Tomatoes & Green Chilies
    • 1 Can Black Beans (just drained, you don’t have to rinse if you don’t want to)
    • Salsa
    • 1 Jalapeno (if you like it spicy – if you don’t like it too spicy, you can use half a jalapeno)
    • 1 Shallot
    • 1 clove Garlic

    Tastiers:

    • Chili Powder
    • Cumin
    • Smoked Chipotle Chili Powder
    • Garlic Powder
    • Salt
    • Pepper
    • Paprika
    • Cayenne Pepper
    • Red Pepper Flakes

    Garnish / To Eat With:

    • Shredded Cheese
    • Tortillas or Tortilla Chips (or both!)
    • Hot Sauce (my favorite is Tapatio)

    Directions:

    In a pot, cook the rice first. This is clearly the longest part of the process. Now, I cook 1 cup of uncooked white rice with 1 cup of chicken broth AND 1 cup of water. This gives the blandish rice more flavor – and it makes the rice not so tough. Once the rice is boiling, reduce your heat and simmer for 20-30 minutes (depending on the kind of rice your using and all the liquids are absorbed).

    While your rice is cooking, finely dice and chop your shallot, jalapeno, and garlic. With a little bit of olive oil in a skillet or pan, toss in your diced shallot, jalapeno, and garlic mixture and simmer.

    Once the room starts smelling DELICIOUS, toss in your ground turkey or chicken.

    Continue to check on your rice. Don’t forget about your rice friends.

    Now, here’s where the science of seasoning your turkey doesn’t necessarily exist. I use all those seasonings I mention in the “tastiers” category. It’s honestly TOTALLY dependent upon what level of spice you like / prefer. For me? If your nose isn’t running or you’re not crying, then it’s not spicy enough. Obviously this is an exaggeration, but needless to say, I like it spicy.

    Here’s what I use MORE of vs what I use LESS of – some spices are much more pungent / strong than others – I am no expert – this is just what I have learned after YEARS of making this dish (and other dishes similar to it where I use these spices):

    MORE OF:

    • Salt
    • Pepper
    • Chili Powder
    • Red Pepper Flakes

    LESS OF:

    • Cayenne Pepper
    • Cumin
    • Garlic Powder (I use less garlic powder when I use cloves of garlic in the dish – I like to use the garlic powder to season the meat directly whereas the cloves of garlic help give the whole dish a good garlic flavor)
    • Paprika

    DASH OF:

    • Smoked Chipotle Chili Powder
      • I have recently discovered this spice in my dishes and I LOVE IT. However, it is SUPER strong, so I use it a dash at a time. It’s a really strong flavor, so you don’t want to overdo it. You can easily add more, you can’t take it away.

    Okay, so once you’ve played around with the level of seasoning you like on your ground chicken / turkey, jalapeno, shallot combo, you put in your can of diced tomatoes and green chilis along with your drained can of black beans.

    Get all the meat and seasoning and tomato and green chili and black bean mixture mixed well. Make sure your meat is cooking all the way through. Simmer on a medium heat.

    Once your rice is done, toss it in the skillet / pan.

    Get it mixed well and good – add more seasonings if you do a taste test and you think it needs more of something. I usually, at this point, add more chili powder, salt, and pepper. Those are my “base” seasonings for this meal.

    You can also, at this time, toss in some of your favorite salsa and shredded cheese.

    Get the dish totally mixed and make sure your meat is cooked all the way through.

    If, after a taste test, it’s tasting good to you – you’re good to go.

    For Serving:

    Now, I love to add lots of my favorite Tapatio hot sauce and shredded cheese to my individual dish. And I love to make tacos with tortillas. And I love to dip tortilla chips into the dish like nachos.

    This is all up to you and your tastes. But the Arroz Con Pollo mixture is PERFECT with tortillas, tortilla chips, cheese, salsa and a cold beverage.

    Yeah, my favorite. In fact, I love it so much, we ate it for dinner again on Tuesday. This dish makes BALLER leftovers. Yeah, I said BALLER.

    You guys, remember when I made those sweet DIY neon-toed shoes? Oh, and previewed a little outfit. Well, the real-life application is HERE.

    I really wanted to wear this shirt I got from Kohl’s in the clearance section ($8, woop! woop!), but also wanted to be able to make it look casual and dressy in the same day.

    I wasn’t sure about the shirt at first – I knew I LOVED the colors, but I wasn’t sold on the style. I am always worried that I can’t pull off the flowy, baggy shirt – that it makes me look unshapely. Or something.

    But honestly, in the end, I think it worked pretty well. :) What do you think? Do you love the flowy, baggy, loose shirts? Do they fit well on you or do you have trouble styling them right?

    Plus, I loved pairing the casual outfit with shorts and my DIY neon-toed shoes and the night outfit with heels and my favorite jeans.

    I just love spending time with good friends and laughing till my stomach hurts. It’s so rejuvenating.

    You guys, remember when I showed you a preview of these little diddies last week? Well, I got a bunch of questions and a bunch of requests to show you how I did them!

    Well, it’s here, yo!

    Now, the DIY neon-toed shoes are not really new. I’ve seen other tutorials out there – but I wanted to try it on my own and switch it up a little bit to make them a little bit more casual than dressy.

    Also, I wanted to try it on the cheap to make sure it worked before I went and bought other shoes to try this little DIY on.

    Anywho.

    Here’s what I did.

    [here be mah shoes. i got these from wal-mart for $5. quite literally $5. i know, wal-mart shoes for $5 dollhairs. hard to believe, right? *this is me being sarcastic* sure, these shoes look boring and nerdy and ordinary. and they are. but wait.]

    [now i used some painters tape i had around to tape off the areas of the shoes i didn't want spray paint to get on. pretty self explanatory. but seriously, over cover. you can't be too careful when taping the shoes].

    [I got some Rust-oleum fluorescent neon yellow spray paint and spray painted those bad boys. NOW HERE IS THE KEY: do light, sweeping motions back and forth. DO NOT spray too long directly on the shoes or else the paint will run and pool. mist the shoes. you can mist the shoes for a while, but don't over do it. also. be careful of wind. i wasn't so careful and messed up a little bit but was able to fix it quickly.]

    [now let the shoes dry in a, well, dry place. then get your sealant. i've had this clear acrylic sealer for a while - i think i got it from Michael's or maybe even Wal-mart in the crafts section. it's like $3 or $4.]

    [spray a couple sweeping clear coats of the sealant when you spray painted the shoes. again, do it in light sweeping motions. you don't need to do much, but make sure it's fully covered.]

    [let your sealant dry and then remove the tape and BAM. you got some sweet new kicks.]

    [i couldn't wait to see what they looked like on so i went ahead and tried them on that night. now, this obviously was a different outfit than i was planning on wearing them with but i kinda loved it. i mean, it was also nighttime so i didn't get to wear them out (also cause they were still wet) but i was pumped to get a preview.]

    [seriously, i know they're $5 Keds-looking shoes from wal-mart, but i'm kinda loving these. now i want to get a bunch more pairs and and a bunch more colors and have a pair to match all my outfits hahah!]

    [I can't wait to show you the outfit I wore the next day with my new AWESOME neon-toed shoes!]

    You guys, Happy Sunday! 

    It’s been a great and SUPER productive weekend. It’s been good but husband has been out of town and frankly, I’m ready for him to be home. I miss him. Sappy, I know. But it’s the first time we’ve been apart in FOR-EV-ER. So, yeah. Come home, husband.

    Anyway.

    I’m up e-a-r-l-y for SWIM FOR SMILES. It’s TODAY! Huzzah!

    But just cause I’m up early for something other than church, doesn’t mean I get, like, a Sabbath pass. Nor would I want one.

    [SIDE NOTE: I love that my church has what's called "iCampus" so I can catch today's service tonight online! I won't miss anything. If you want, you can check it out at 8pm EST tonight! :) ]

    I was getting some work done last night and was listening to one of my Hillsong playlists and the Hillsong Chapel version of “Saviour King” came on. I love this song. It’s always one of those songs that I love more every time I hear it. And I REALLY love this acoustic version of it because it’s so raw. It’s honest. It’s emotional.

    You guys, before I get to the weekly round up of links, I thought I’d just share a tune with you. Because hey, it’s Saturday. And frankly, if you’re reading this on a Saturday, you just might need a tune.

    In the video I have embedded below is Kacey Musgraves. She was the opening act for Loretta Lynn when I saw Loretta in concert a few weeks ago. She won Nashville Star a couple years ago. SHE IS AWESOME. Seriously. This girl needs to be famous. Her lyrics are fantastic and she’s got such a great voice. (I guess you probs have to at least enjoy Country music to like her, but who knows?)

    Anywho. She sang this song that night and I am JAMMING to it. Well, it’s a slower song, so jamming probably isn’t the right word. But whatever.

    You guys, hubs and I love going to restaurants that we haven’t been to in our town. Well, hubs had been to Wooden Nickel, but I had never been.

    I mean, the Wooden Nickel is a STAPLE in Hillsborough. It’s a small town pub.

    BTW: did you know pub is short for public house? I actually did not know that. New things you learn every day.

    Anywho. Here are some shots from dinner and, of course, our thoughts on the place.

    [ANY bar / restaurant / public house that has those hooks underneath the bar for your purse wins in my book. I HATE having to put my purse on the floor when i'm sitting at the bar. HOOKS WIN! also, yes, that's my Louis Vuitton. i have had it for years. it was a foolish, foolish financial decision / purchase i made in college when i was like, "oh? i can put this one a credit card? YEAH." bad idea. more on that later. i should sell it, but i can't part with it].

    [my dinner. buffalo chicken potato skins. they were good, not great. but i could tell that it was more my taste buds than anything].

    [i couldn't even get husband to put his dinner down long enough for me to take a picture of it. mac and cheese chili burger and garlic fries. i'm gaining weight thinking about it. i had a bite. it. was. delish. omgah. so good].

    Anyway. The place is awesome. Drew (our waiter / bartender) was AWESOME – called us by name, was super helpful. Christina was also working and she even called me by name and she wasn’t even our waitress. It’s just one of those small town pubs that has awesome bad-for-you-comfort food and amazing hospitality.

    I think we’re gonna make this place a regular stop.

    Overall Stillman Grade: 3.7 outta 5 Stillman Stars

    Look, I’m not even a Star Wars fan (as in, like, I’ve never seen them. Shame, I know), but that joke cracks me up. I have no idea why.

    A lot of things to high five about this week. Let’s get to it.

    [one - this dog. you guys, i have two dogs now (you know, since you marry husbands and dogs) but this is my baby. she's been with me for over four years. and i love her. this is what she does to me outside my bathroom in the morning while i'm getting ready. SERIOUSLY? i can't handle her].

    [two - burritos. i mean, burritos are my thing. they're my beat. i'd eat 'em every day if i could. breakfast burritos. lunch burritos. dinner burritos. fourth meal burritos. i love them. really, i love Mexican food in general, but you win me over with burritos. today, i'm going to purchase $30 in gift cards to Chipotle - cause if i purchase $30 in gift cards to Chipotle for "graduation" you get a free meal. psh. i mean, i'm gonna spend AT LEAST $30 at Chipotle in the next six months. i'm graduating... from being awesome. i give myself those gift cards. AND i get a free meal. that's called forward thinking my friends].

    [three - these neon toe keds-looking shoes i made. yeah, i made 'em. you can bet your boots a tutorial is coming next week. they only cost me $5 dollhairs. BOOM].

    [four - SWIM FOR SMILES is this weekend! the company i work for also happens to run a non-profit youth triathlon that raises money for the NC Children's Hospital and it's THIS SUNDAY. every one has been working SO hard and it's gonna be awesome to see it all come together on Sunday!]

    [five - Christopher and his Lion Story. now, some of you who are new to my blog might not know that i went on a mission trip to Kiria, Kenya last summer. I also sponsor a young girl in Kiria named Anastacia (photo in this post). Kenya has a major place in my heart. i knew when i left that i would go back again, but i also knew i wouldn't want to go without my husband. so, john and i are going back in September. we're going to do the best we can to try and go back to the community once a year. it's going to be difficult, but God willing, it will happen. this post is not about that and i'll probably talk a lot about it later, but if you're interested in more information you can certainly ask me, or if you are feeling generous and want to donate - we listed information on our wedding registry on how to do that. ANYWAY. that's not what this is about.

    this is Christopher. he is one of my many Kenyan friends. he has a story about a lion. now, this is a condensed version of the story i experienced, but it's still awesome nonetheless. i saw this video that was posted yesterday and it totally made my day. i miss that guy. can't wait to hear it again in person.

    gah. i miss kenya].

    You guys, per usual, I’m not gonna lie: I’ve had this outfit forever and I love it. However, every time I wear it I sometimes think I look like either:

    A) a Catholic school girl in a school uniform of some kind (i.e. Mary Catherine Gallagher?),

    B) a little kid,

    C) I have no idea.

    Yet, I still lurve this outfit. I mean, I know it’s not “conventionally” fashionable – but what does that really mean? Or is it? I don’t know. Still trying to figure all this out.

    Also, I was, like, super honored when Bonnie of Mini Me Style gave me a “Versatile Blogger” award yesterday. I mean, I love her blog and when she commented and told me she’d named me one I was like WHAT?

    That’s bananas.

    Bonnie is a petite (5′ tall), PhD student (way smarter than me), lady blogger who mainly blogs about fashion for petite people (and just awesome people in general). I love her cause she has AWESOME style but is clearly super down to earth. I love this girl! So, thank you SO much, Bonnie!

    I mean, I guess you could say I’m a versatile blogger in that I’ll blog about anything that’s on my mind. There’s been a lot of fashion posts lately, but I’ll blog about my wedding, food, crafts, bits, loving the Lord, and whatnot all the time. So I guess you could call that versatile! WOOP!

    Anywho.

    My 7 Random Things:
    1. I played golf since I was two years old. I played on the varsity team (a team of all boys) in high school (was co-captain my senior year), and then coached a high school team for two years. I don’t play competitively anymore, but sometimes I wish I’d had.
    2. I taught high school English for two years after college. I loved that job. Sometimes I really miss teaching.
    3. I’m left-handed. South paws, FTW!
    4. I took French for nine years growing up (my elementary school had a French immersion program where I spent half my day in French class and half my day in English) – but I can barely speak a sentence now.
    5. When I was growing up, my family went camping a lot. We had a CB radio in our old 80s motor home – my CB radio handle was “Little Pony” – yeah, not creepy at all being 8 years old and talking to truck drivers with a handle like “Little Pony.”
    6. I won’t hang my legs or arms off the bed when I’m sleeping because I’m convinced a monster / predator / thief / bad person is going to grab it in the middle of the night and eat me alive.
    7. There was a restaurant next to my house in my hometown growing up that I LOVED. It was called The Tortilla Factory. I once ate there 76 days in a row in high school. Not ashamed. I miss that place more than I can say.

    You guys, I love shorts. Also, I love doggie photo shoots.

    We run. We jump. We swim and play. We row and go on trips
    But the things that last forever… are our dear friendship.

    Man I loved that show. Don’t know what I’m talking about? Then you must not have watched Nickelodeon in the 90s.

    For a long time, I didn’t love shorts cause I’m short and I felt like they made my legs look stumpy. But then I just realized I wasn’t getting the right style shorts and I was getting them too small.

    I have since learned from my short mistakes. And now I love shorts. LOVE em. 

    I know these outfits are a bit more “caz” – is that how you spell the abbreviation for casual? Casual. Cas. Casj. You know what I’m trying to say.

    The doggie photoshoot is at the end of this post. Don’t give up now.

    [i decided that you guys deserve better and that i should at least try to get some better photos. it's tough to get someone else to take them - i'm not gonna make husband take them... so i attempted with a tripod. i felt awkward. i am clearly not made for fashion photography - also, notice my dogs supervising]
