One Year of #YOLOmondays & the LAUNCH of the Funday Monday Link-Up!

Happy Monday!

I am SO excited because Carly and I have some big news for y’all today: we’ve re-branded and we’re relaunching our weekly Monday link-up!

I can’t believe this is the 52nd week of this weekly link-up! Seriously! AHH! Where has the time gone? I can’t believe that 52 weeks ago I posted this totally embarrassing video announcing the launch of #YOLOmondays. And then the link-up just took off from there!

Then in August, Carly was so awesome to join me as a regular co-host and she’s helped me grow this link-up SO much over the past year. I can’t thank her enough for being such an awesome co-host and such an awesome blog friend.

And then there’s y’all – the ones who link-up to this link-up EVERY single Monday! We have, on average 150+ of you that join us on a weekly basis and we can’t thank you enough! I’ve discovered some AMAZING blogs and met some really great blog friends just through this link-up – and I know y’all have, too. Which is EXACTLY why we do this thing.

But, the truth is, Carly and I felt it was time to take #YOLOmondays in a new direction – make it feel FUN, fresh, and exciting!

How-to: Save Money on FoodI am SO excited to have my first GUEST POST for Molly’s Money today! As y’all know, this money series is one where I talk about getting out of debt, saving money, how-tos, and really all things personal finance.

So, the FABULOUS Lauren from Almost Casual is here to share with y’all her tips on saving money on FOOD (a notoriously tough category to save in). So, take it away, Lauren!

I’m here to talk about saving money on food. Molly has talked before about saving money when you don’t have money to spend, and I think this definitely falls into that category.

So here’s the thing: sometimes saving money in the food category can be hard. I mean, really hard. When it comes to saving money on food, the math part is easy. The creating a “plan” part? Piece of cake. Anyone can look at a piece of paper and say “hey! Ramen every other night and pb&j for lunch every day would cut our grocery bill by $100/month!” but then putting that plan into place quickly backfires when you realize that sad peanut butter sandwich is WAY less appetizing than bojangles. Trust me, I’ve been there. The key is to keep trying.

First things first. Buying groceries is cheaper than eating out.  So before doing anything else, take a serious look at your month. How many times did you eat out? This is a hard habit to break, but once you do, it’s a lot easier to feel in control of your food budget.

Making the transition. So, once you’ve decided to eat out a little less, you’re left with “what shall we eat?“. This is where a little bit of planning comes in to play. My husband and I do our major grocery shopping every two weeks. We start with what we want to eat for dinner, usually picking about 8-10 things. (knowing that some days I’ll just want to make mac and cheese or that we will eat out for a friend’s birthday or date night) and build our grocery list from there. My husband actually really likes to “meal plan” because this means he gets some say on what’s for dinner! Ha!

Money Saving Tips. So now you’re eating out less, and thinking “hmm, I’m still dropping hundreds at the grocery”. Once you are used to cooking at home (or if you just want to plunge right in to saving as much as you can) changing the way you cook will save even more money.

1. Re-evaluate your list. Start by writing down the things you are going to cook, and then write the ingredients you need. Once I started this I stopped forgetting things (like butter, hello!) for recipes I wanted, and also kept from double buying things (like lemon juice, random!) that I already had.

2. Stop buying the prepared servings of things. Is single serve minute rice super easy? Of course. But measuring out rice and water is barely a step above that. And you can buy like 5x the amount of “non instant” rice for the same price as the instant stuff. Want to take it even further? Buy rice and other dry goods in the bulk section. Store them in pretty containers (or super cheap mason jars!) and they stay fresh even longer.  Here’s a list of things that I no longer buy in single servings, and usually buy in the bulk section.

  • Grits
  • Oatmeal
  • beans
  • nuts
  • dried fruit
  • rice

3. Pack your leftovers for lunch. I know some people abhor leftovers. If you can’t stand the idea of reheating food, then definitely stock up on the lunchy items that you enjoy. But every time you eat leftovers, you are literally saving money that would otherwise be thrown away. I hardly ever alter large recipes (especially things like lasagna!). Instead, we eat what we can, pack some for lunch and freeze some for later. My husband still gets lunch things when we shop (he loves pb&j more than I knew was possible) in case we don’t have leftovers, but usually we try to eat up what’s been made before we make more.(tamales freeze well and make excellent lunch!)

4. Cook from scratch. Is this daunting? Yes. Is it worth it? YES! This will save you a BOAT load. Here’s a list of things that I make from scratch that are totally worth it. (They link to either my own recipes I use, or my favorite recipes from others online)

What do all these things have in common? They are all normally packaged goods. Read: they are pricier items, especially if you are brand specific. What else do they have in common? All of them (except granola) you can make in large batches and then freeze. I usually make about 8 big pretzels at once. We eat two, then I freeze the rest for an afternoon snack or football party later down the road. You know those “single serve” frozen biscuits at the store? They’re about $8+ per bag at the store. You can make biscuit dough at home and freeze it the same way for so much less!Revamping your monthly food spending is definitely a process! Remember that you can always start small. Fresh biscuits this weekend perhaps? Then, do more as you feel comfortable! After awhile you’ll be a grocery list making, staple cooking, dinner-prepping master! There are so many awesome blogs/cookbooks/websites out there with delicious options, before long cooking at home (and saving money doing it) will be second nature! RECIPE: Delicious "Breakfast After Dark" Breakfast Pizza using I Can't Believe It's Not Butter

When I lived in Richmond, Virginia, there was this grocery store called “Ukrop’s.” Ukrop’s was famous for a few things: being closed on Sundays, not selling alcohol or cigarettes, their delicious cakes, and their delicious breakfast pizzas.

I used to stop by Ukrop’s 3-4 times a week on my way to work to pick up a slice. It was so ridiculously good. And for YEARS since leaving Richmond, I have tried to duplicate and find a recipe that rivals the Ukrop’s breakfast pizza.

And then, after many times of trial and error in the past, ENTER THIS RECIPE.

Seriously. Oh my goodness. I made this breakfast pizza on Tuesday night (because breakfast for dinner is the BEST!) and it was so ridiculously good my mouth is watering as I type this and look over the pictures of it. And, while it took me a little longer at first to make this (because I was totally making it up as I went along), it was SO easy. I am fairly certain I’m going to make it again… probably tonight. And then twice more this weekend.

Enough dilly-dallying. Here are the recipe and instructions:

INGREDIENTS:

  • 1 prepared pizza crust (yes, I know you could do homemade crust, but I wasn’t that adventurous, so I didn’t in this case)
  • 6 tablespoons (approximately) of I Can’t Believe It’s Not Butter! buttery spread, divided
  • 1/2 pound of ground sausage (I used turkey sausage)
  • 3-4 pieces of bacon (I used turkey bacon)
  • 6 eggs
  • 1 tablespoon of milk
  • 2 russet potatoes, shredded (for the hash browns!) :)
  • 1-2 cups of shredded sharp cheddar cheese (depending on how cheesy you want it)
  • Salt, pepper, paprika, and cayenne pepper

INSTRUCTIONS:

Gather your ingredients and get them ready.  Preheat your over to 350 degrees.

Properly wash and clean your potatoes. Grab a medium bowl and fill it with COLD water. Shred your potatoes over the bowl.

This is the key to the hash browns… once you’re done shredding the potatoes, stir them in the cold water until the water is cloudy. Then, drain the potatoes, put them BACK in the bowl and cover them with cold water AGAIN. Stir the potatoes AGAIN until the water is cloudy (this removes a lot of the starch), then drain again and pat dry with a paper towel removing all the excess water.

In a skillet, add 3 tablespoons of I Can’t Believe It’s Not Butter (ICBINB) buttery spread and melt. I am being totally honest when I say this buttery spread is SUPER delicious and made cooking all the pizza toppings a BREEEEEEEZE.

Put your shredded potatoes in the skillet on top of ICBINB. Add salt, pepper, paprika, and cayenne pepper to taste. Mix the spices in. Then, cook the potatoes over medium heat until brown on both sides. Brown, not burnt.

In a separate skillet, add ONE tablespoon of ICBINB and cook your bacon.

In ANOTHER skillet, add another tablespoon of ICBINB and brown your sausage.

In a medium bowl, prepare your eggs for scrambling! I add approx. one tablespoon of milk to my eggs and blend well. This makes the eggs FLUFFIER! RECIPE: Delicious "Breakfast After Dark" Breakfast Pizza using I Can't Believe It's Not Butter

While all those toppings are cooking, melt one tablespoon of ICBINB in a small bowl. Then, with a pastry brush, brush the melted ICBINB all over your prepared pizza crust.

When your hashbrowns (and other toppings) are done! Put them aside on bowls or plates.

Now’s the time to scramble your eggs (do this last). It is KEY to leave your scrambled eggs running. DO NOT COOK THEM ALL THE WAY.

Remove your runny scrambled eggs from the stove, and then spread on your prepared pizza crust.

Add your toppings. Hash browns, bacon, and sausage. RECIPE: Delicious "Breakfast After Dark" Breakfast Pizza using I Can't Believe It's Not Butter

Once those are spread evenly, add your cheese. It totally depends on how cheesy you want it. I love cheese, so I added a lot. :)

Then… toss that puppy in the oven! (NOTE: I did put my crust on a pizza stone, but you could certainly place it directly on the rack).RECIPE: Delicious "Breakfast After Dark" Breakfast Pizza using I Can't Believe It's Not Butter

Bake your pizza in the oven at 350 degrees for about 10 minutes (or until cheese is brown and melty).

Yes, it is as good as it looks. But, I guess you can’t really go wrong with things like cheese, eggs, sausage, bacon, and hash browns all on top of a pizza crust that’s been prepped with delicious buttery spread and then baked in an oven. :)

Now, I made up this recipe totally on my own, but the fabulous people at I Can’t Believe It’s Not Butter! have a bunch of AWESOME breakfast-for-dinner recipes on their “Breakfast After Dark” site. There’s even another breakfast pizza recipe! You can check out some of their webisodes here.

I have really learned to LOVE cooking. I’m no professional chef. I’m no Paula Deen or Rachel Ray, but I’m not half bad. I have a few specialties, but I won’t be writing any cookbooks anytime soon (although that is secretly something I’d love to do one day).

Well, ever since I became pregnant, I’ve still loved cooking, BUT I need it to be simple. I need it to be easy. I don’t want to spend a ton of time in the kitchen.

I’ve recently discovered the GLORIOUSNESS that are the Philadelphia Cooking Cremes you can get at the grocery store (no, this is not a sponsored post, Philadelphia has no idea who I am). I had a coupon for a free one a few months ago and now I’m hooked. There are a ton of coupons out there for these cooking cremes and that makes them only like $1 or $2 each and they really add SO MUCH to a simple, plain dish.

Anywho, I threw this dinner together earlier this week and it was SO good so I thought I’d share it with y’all.

Have any of y’all ever tried the Philadelphia Cooking Cremes?

Ingredients:

  • 1 tub of Philadelphia Italian Cheese & Herb Cooking Creme
  • 1.5-2 pounds of boneless, skinless, chicken breast
  • 1 cup of orzo pasta
  • 1 12oz. can of diced tomatoes, drained
  • 2 cups of frozen broccoli
  • Salt and pepper to taste
  • Garlic Bread (as a delicious side)

Directions:

In a large skillet, cook the chicken breast and season with salt and pepper. Cut into cubes. In a separate pot, bring water to a boil and cook the orzo pasta according to the directions on the box or bag.

In the large skillet, combine cooked chicken with frozen broccoli and your tub of Philadelphia Cooking Creme (I used Italian Cheese & Herb this time, but I’ve also used the Creamy Garlic before which is SUPER yummy).

Once the pasta is cooked, drain it and add it to the skillet. Add your can of drained, diced tomatoes. Then mix thoroughly until everything is cooked through and you have a nice creamy consistency.

Serve with a piece of garlic bread and a glass of milk and enjoy!
